Welcome to the first Foodie Friday, hosted by our fabulous Gollum at Designs by Gollum. Foodie Friday is a weekly pot luck party and such a wonderful way to end the work week. My contribution this week is a quick meal prepared in under 25 minutes.
My hubby came home tired and hungry and asking, "What's for dinner?" I asked if asparagus was okay, and got a hearty, "Oh Yeah!" in reply.
I used a package of Aidell's chicken and mango sausages and cut into bite sized pieces, browned them, then removed to a plate. Cut fresh asparagus into thirds and added them to the pan used to cook the sausages to brown a bit. Added a splash of olive oil, a little pat of butter, some garlic salt and let them cook a few minutes before adding a little bit of water and covering the pan.
Our new bunny is overseeing dinner. It looks like he may approve of this one!

Your meal reminds me of springtime. I love the bunny and the quick dinner would be good with all types of meat mixed with the asparagus. I'm going to have to try this!

Hi Diane...This looks company elegant...but I've never heard of this brand of sausage...where do you buy it and is it in the frozen or fresh sections? I don't suppose you get it at Wal-Mart... I so want to try this. LOVE that bunny!

You won a door prize at Foodie Friday. I thought I'd visited you earlier, but I must have gotten discombobulated by Mr. Linky. All of the links disappeared, but luckily Susan told me how to save them, and I was able to re-type them (although sometimes I typed them twice and thrice, oh well). Anyway, this recipe is sublime!
I love the addition of asparagus with the mango sausage, and that lovely bed of rice.
